Ingredients
270 g T65 flour
200 g T110 flour
50 g of brown flax seeds
50 g of blond flax seeds
7g of dry baker's yeast
350 ml of warm water
10 g salt

Au Robot: Combine all ingredients except salt in the bowl of your food processor. Knead the dough for 2 minutes, then add the salt and knead for 8 minutes on medium speed.
Let the dough rise for 18 hours.
At MAP: Add all the ingredients to the bowl of your bread machine, in the compartments provided for this purpose. Select the mode: preparation of the dough for wholemeal or semi-complete bread.
Take the dough out of the bowl or tub. Flour the dough, fold it 3 times on itself, then put it in a ball. Flour it again and put it in a bowl for 2 hours.
Preheat the oven to 230° for 30 minutes with a cast iron casserole and its lid.
Take the casserole out of the oven, put the ball of dough in it, make a cross on it with a blade, put the lid back on.
Bake for 30 minutes with the lid on, then 15 minutes without the lid.
Let cool on a rack.
