The perfect aperitif
Bruschetta are perfect for an aperitif. First of all, the bruschetta are 100% vegan and lactose free, if you do not add mozzarella as in some recipes. They are therefore suitable for many types of diet which is useful when you have guests with dietary restrictions. Moreover, they are relatively healthy because they contain almost only tomatoes, which balances perfectly a classic aperitif often focused on fatty and salty foods.

200 g cherry tomatoes
Herbs: Thyme, basil and flat-leaf parsley
2 tablespoons of black olives, Kalamata type
40 ml olive oil
1 teaspoon of white vinegar
1/2 garlic clove or a small clove
100 g of hummus
Salt and pepper
In a bowl, pour the olive oil, the white vinegar and crumble the thyme (about 8-10 branches).
Add cherry tomatoes cut in half as well as the coarsely cut black olives. Chop the garlic clove then finely chop the basil and the flat-leaf parsley (about 1 handful of each). Add everything to the cherry tomatoes. Add salt and pepper. Mix well.\ \ **Note:** You can also add capers and anchovies to the tomato salad. Do not hesitate to let the tomatoes marinate with herbs, olives and olive oil for 2-4 hours, this will enhance their taste to the maximum!
