Ingredients
90g flour
3 eggs
225ml of soy milk
40g of parmesan cheese
1/2 fenouil
1 onion
400g of cherry tomatoes
Herbs of Provence
salt/pepper
huile d'olive
Etapes
Preheat your oven to 210°C.
Meanwhile, chop the onion and fennel bulb.
In a frying pan, brown the onion and fennel in a drizzle of olive oil for about 10 to 15 minutes.
In a bowl, mix the flour, the herbs de Provence and the parmesan. Add the eggs. Mix well. Add the milk gradually, whisking vigorously until a smooth paste is obtained. Salt and pepper.
In an ovenproof dish, spread the onion+fennel mixture and the cherry tomatoes. Pour the clafoutis mixture on top. Bake for 25-30 min.
