Ingredients
250g of Azuki beans
200g of tomato sauce
200ml of water
2 peppers
1 small onion
2 cloves of garlic
1 tsp cumin
1 c.à.s the bell pepper
1 tbsp of sweet pepper
2 tbsp of Mexican spices
a pinch of hot pepper
salt / pepper / olive oil
Etapes
Soak the beans the day before.
The next day, drain them and cook them over medium heat in 3 times their volume of water for 30 to 45 minutes.
Brown the minced onion and crushed garlic in a drizzle of olive oil
Add the minced bell pepper and brown for 5 minutes.
Add beans, tomato sauce and spices and stir for 2-3min.
Add water and cook for about 20 minutes, stirring occasionally.
Enjoy with rice or in a wrap with some salad leaves and avocado.
